How to Buy the Best Chicken

If you are going to buy chicken, make sure it is one of the last things you add to your grocery cart before going to the checkout, so it does not have a chance to warm up. Chicken Basics – Chilling, Freezing, and Thawing

You need to use fresh chicken within a couple of days. If you are not going to do this, it will need to be frozen. To defrost frozen chicken, you can either use a microwave, cold water or the refrigerator. The safest yet slowest way is to use the refrigerator. Boneless chicken breasts will thaw overnight in the refrigerator but a whole chicken might take a couple of days. If you defrost too much chicken in the refrigerator, you can refreeze the surplus.

If you want your chicken defrosted quicker, you can do it in water. Place the chicken in a Ziploc bag if it is not in sealed packaging and submerge it in cold water. You will need to change the water every half an hour to keep it cold. A whole chicken should be thawed in two or three hours and a pound of chicken breasts will be done in an hour.

Only thaw chicken using a microwave if you plan to cook it right away because it might start getting warm in places and cooking, which can lead to bacteria spreading through it.

You cannot cook chicken from frozen in a slow cooker or in the microwave but you can cook it from frozen on the stove or in the oven if you allow for a 50% longer cooking time.

You can marinate chicken in the refrigerator for up to two days but you should not stuff a whole chicken unless you are going to cook it right away. Cooked chicken needs to reach an internal temperature of at least 165 degrees F to ensure that any bacteria have been killed.

How Long Will Chicken Keep?

Ask any kid what they want for dinner, and most will shout out, “Pizza!” This simple meal is popular all over the world in one form or another. While the precise beginnings of pizza are unknown, there are some early references to foods that sound suspiciously like pizza to point us in the right direction.

Ancient History

The army of Darius the Great of Persia cooked flat bread on their shields and topped the bread with cheese and dates as early as the 6th century BC. Sounds suspiciously like a pizza, huh? Rome’s first historian, Cato the Elder, also wrote of a “flat round of dough dressed with olive oil, herbs and honey baked on stones” in the 3rd century BC.

In the first century AD, Marcus Gavius Apicius wrote a cookery book that gives us great insight into the cuisine of ancient Rome. One recipe describes a variety of toppings put onto a bread base. The toppings included chicken, cheese, pine nuts, mint, garlic, oil, and pepper. These are still common toppings found on pizza today!

In the ruins of Pompeii, there is further evidence of pizza eating. Pompeii was covered in ash when Mount Vesuvius erupted on August 24, 79 AD. Shops have been excavated that contained marble slabs and other tools of the pizza trade. A statue found in Pompeii currently resides in the Museo Nazionale in Naples, which is known as “I Pizzaiolo.” This title means “one who creates pizza.”

The Birth of the Modern Pizza

It was not until 1522 that tomatoes were introduced to Europe from the New World. At first, they were thought to be poisonous. It was not until the poor people of Naples began sampling the tomatoes and adding it to their dough that the modern pizza was created. The dough was topped with olive oil, lard, cheese, and herbs, along with the tomatoes. Neapolitan pies got the reputation of being the best in all of Italy. By the 17th century, visitors to Naples would be sure to make a trip to the poorer sections of the city to taste the “pizzaioli” that the peasants ate.

In the 18th century, Queen Maria Carolina d’Asburgo Lorena had a special oven put into the summer palace so she and her husband, Ferdinando IV of Naples, could serve pizza to their guests. By the 19th century, pizza was sold from stalls in the streets for breakfast, lunch, and dinner. It was a popular treat to have pizza dough that had simple toppings like anchovies or mushrooms.

In the late 19th century, pizza finally made it to the New World. New York City sported the first pizzeria in 1905, but it just did not catch on. In 1943, Ike Sewell created the deep dish pizza in his restaurant, Pizzeria Uno in Chicago.

American soldiers in Italy during World War II really developed a taste for pizza. When they came home after the war, they wanted pizza. By the 1950s, pizza began its swift rise in popularity in the United States, becoming one of the top foods in the nation.

So you want to throw a party, but you do not have a lavish budget. There will not be any silver serving trays and waiters in black ties mingling among your guests with fancy hors d’oeurves. You would be surprised how nice you can make everything look on just a tiny bit of money, however.

Presentation is key. You can serve up the simplest foods and your guests will rave about them if they look good. This is easy to do. Need a tray? Wrap up a piece of cardboard in aluminum foil, shiny side in, please. This gives your “tray” a pewter-like finish. Top it off with a pretty paper doily and you are ready to serve your appetizers. It looks lovely and professional, yet you do not need to spend all afternoon polishing the silver.

If you are a fan of sandwiches for parties, make up a simple sandwich board. Grab a piece of 1 x 4 lumber. Cut it to the length you want… three to six feet is usually adequate. Clean the wood up with a mild detergent and let it dry completely. Wrap the board in waxed paper. In the United States, many people know about Cinco de Mayo. Huge crowds cannot wait to start the festivities every May. But few know the really history for this Mexican celebration. The average person in the States will say it has something to do with “the Mexican freedom thing,” that is not the truth. Independence Day for Mexico is the 16th of September.

During the 1950s, the United States had a program called The Good Neighbor Policy that encouraged Americans to reach out to our neighboring countries. Cinco de Mayo was first introduced to Americans at this time. In the 1960s, Chicano activists made the holiday more visible as a method to inspire cultural pride among Mexican-Americans.

By the 1980s, the holiday was slowly catching on. During this decade of commercialism, Cinco de Mayo was advertised as a great holiday to spend drinking the alcoholic beverages made by several American companies. These companies really brought Cinco do Mayo into the mainstream of American culture, although they diluted the true meaning behind it, which was to celebrate the Mexican victory over the French in 1862.
