- Creamy Banana Salad: Place two bananas (peeled and sliced), one cup of strawberries (sliced), six pitted dates (cut into pieces), and 3 tablespoons of toasted or plain shredded coconut in a bowl. In a smaller bowl, combine one cup of vanilla or plain low-fat yogurt and 1 teaspoon of cinnamon. Add the yogurt mixture to the fruit and toss well to combine and serve.
- Pesto Egg Sandwich: Take a two to three hard boiled eggs and slice each of them into a few lengthwise slices. Toast slices of whole grain bread. Take one slice of toast and spread with some spicy mustard and place a few egg slices on top. Add a slice of low-fat cheese of choice and some sprouts. Spread a thin layer of prepared basil pesto (and, if desired some fresh basil leaves for added basil flavor) on the other piece of toast and place on top of the sandwich.
- Sweet Salsa Topped Waffles: Toast a couple of whole grain waffles and top with a combination of diced apple pieces, canned crushed pineapple (drained), some chopped nuts, a drizzle of honey or maple syrup, and a sprinkle of cinnamon. If desired, top each waffle and sweet salsa with a spoonful of plain Greek style yogurt.
